Pork Belly Kare-Kare

If you feel like cooking Kare-Kare but you don’t have oxtail on your fridge why not try Pork Belly as an alternative?



INGREDIENTS

3              tbsp       onion, minced
1              tbsp       garlic, chopped
1/4         cup        string beans
1/4         cup        Banana Bud (puso ng saging)
2 eggplants, sliced crosswise (about 2 ½” long)
1/2         k              Pork Belly, (preboiled)
4              tbsp       of cornstarch diluted in water
3              tbsp       peanut butter
2              tbsp       toasted ground peanut
1 piece beef cube.
2              tbsp of vegetable oil.
1 bundle bok choy(pechay), cut into 2 pieces
6 cups of water

PROCEDURE

1. In a pan, add the vegetable oil and sauté the garlic and onion.
2. Add the pre boiled pork belly
3. Add the 6 cups of water and the beef cube.
4. Add the cornstarch, peanut butter and toasted ground peanut. Simmer until it gets thick.
5. Add bok choy (pechay), Banana Bud, eggplant and the string beans .Simmer to cook.


Serve with shrimp paste or “guisadong alamang".
